Shoofly pie is a Pennsylvania Dutch baked good with a deep molasses filling and a soft crumb topping made from flour, butter, and brown sugar. The filling sets to a slightly sticky, rich layer that contrasts with the crumbly streusel above it. It bakes in about 45 minutes and is traditionally served at room temperature.
Prepare the pie crust: Fit the pie crust into a 9-inch pie plate, crimping the edges as desired. Set aside.
Make the filling: In a mixing bowl, dissolve the baking soda in boiling water, then stir in the molasses and brown sugar until fully combined. Let it cool slightly before whisking in the beaten egg.
Prepare the crumb topping: In another bowl, combine the flour and brown sugar. Using a pastry cutter or two forks, cut the cold butter into the mixture until it resembles coarse crumbs.
Assemble the pie: Pour the molasses filling into the prepared crust, then evenly sprinkle the crumb topping over the filling.
Bake: Place the pie in the oven and bake for 40-45 minutes, or until the filling is set and the crumb topping is golden brown.
Cool: Allow the pie to cool on a wire rack before serving. The texture will firm up as it cools.
