Saffron Pistachio Gelato pairs the floral warmth of saffron with the rich, nutty flavor of pistachios in a smooth, creamy frozen dessert. Steeping the saffron in warm milk before churning is the key step that gives the gelato its golden color and deep aroma. Plan on about 30 minutes of active prep plus several hours of freezing time.

Instructions
Place 1 cup (240 ml) of milk and a pinch of saffron threads in a medium saucepan. Heat gently until just warm to infuse the milk while releasing the saffron's rich color and aroma. Set aside to cool slightly.
In a separate large bowl, whisk together the egg yolks and sugar until thick and pale. Slowly add the warm saffron-infused milk, whisking continuously to combine.
Pour the mixture back into the saucepan and cook over low heat, stirring often, until the custard thickens enough to coat the back of a spoon (about 75°C or 167°F). Be cautious not to boil.
Remove from heat and stir in 1 tsp (5 ml) of vanilla extract. Let cool slightly before transferring to the refrigerator to chill for at least 4 hours or overnight.
Whip the heavy cream to soft peaks and fold it into the chilled custard base. Add the chopped pistachios, mixing gently to combine.
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, or use a deep baking dish to freeze, breaking up any ice crystals every hour until smooth.
