Rocky road brownies start with a rich chocolate brownie base loaded with chopped nuts and mini marshmallows folded into the batter before baking. They take about 40 minutes from mixing bowl to oven and are best cut once fully cooled so the marshmallow pockets hold their shape.
Preheat your oven to 350°F (175°C). Grease a 9x13 inch (23x33 cm) baking pan and line it with parchment paper, allowing some overhang for easy removal.
In a large mixing bowl, whisk together the melted butter, granulated sugar, and vanilla extract until well combined. Add the eggs one at a time, whisking until the mixture is thick and glossy.
In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt. Gradually add this to the wet mixture, gently folding until just combined. Avoid over-mixing to keep the brownies tender.
Pour the brownie batter into the prepared baking pan and spread it evenly.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Remove the brownies from the oven and quickly sprinkle the mini marshmallows, chopped walnuts, and semi-sweet chocolate chips evenly over the top.
