Watermelon sorbet is a simple frozen treat made by blending ripe watermelon with sugar and a squeeze of lime or a few mint leaves, then churning or freezing until smooth. It takes around 15 minutes of prep plus a few hours of freezing time, and works well as a light dessert on a hot day.
In a small saucepan over medium heat, combine the sugar and water. Stir until the sugar completely dissolves, creating a simple syrup. Let it cool to room temperature.
In a blender, combine the watermelon cubes, cooled simple syrup, lemon juice, and mint leaves. Blend until smooth and no chunks remain.
Pour the mixture through a fine mesh strainer into a bowl to remove the pulp, achieving a smoother texture.
Transfer the strained mixture to an ice cream maker, following your machine's instructions, or pour into a shallow dish and place in the freezer for about 4 hours, stirring every 30 minutes to break up ice crystals.
