Instructions
Prepare the Pineapple: In a blender, puree the fresh pineapple chunks until smooth. Strain the puree to remove any fibrous bits, leaving you with a smooth juice. Measure 1 cup to use in the recipe.
Create the Gelato Mix: In a mixing bowl, whisk together the pineapple juice, coconut milk, sugar, vanilla extract, and salt until the sugar is completely dissolved and the mixture is smooth.
