Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan lightly.
Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture evenly into the bottom of the springform pan to create the crust. Set aside.
For the filling, beat the cream cheese and sugar together until smooth. Blend in the vanilla and eggs, one at a time, mixing just until combined. Pour the filling over the crust in the pan.
Bake for about 60 minutes until the center is set. Allow the cheesecake to cool on a wire rack. Use a water bath if preferred to avoid cracking.
For the pecan topping, combine pecans, brown sugar, corn syrup, melted butter, vanilla, and salt in a saucepan over medium heat. Stir until the mixture begins to boil. Remove from heat and let it cool slightly before pouring over the cheesecake.
Chill the cheesecake for at least 4 hours or overnight for best results. Carefully remove the springform rim before serving.
