Peanut butter blossoms are a classic American cookie made from a soft, sugar-rolled peanut butter dough with a milk chocolate kiss pressed into the center straight out of the oven. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, use an electric mixer to cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and creamy.
Add the egg and vanilla extract to the butter mixture, and blend until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, mixing until combined.
Scoop tablespoon-sized balls of dough and roll them in the additional granulated sugar. Place them onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden and the tops have set. Avoid overbaking to keep the centers soft.
Remove from the oven and immediately press a chocolate kiss into the center of each cookie. Let them cool on the baking sheet for a few minutes, then transfer to a cooling rack.
