Prepare the Peach Puree: In a blender, combine the ripe peaches and lemon juice. Blend until smooth and set aside 1/2 cup of the puree.
Create the Gelato Base: In a saucepan, heat the whole milk and sugar over medium heat until the sugar dissolves completely, stirring occasionally. Remove from heat and let it cool slightly.
Mix the Ingredients: In a mixing bowl, combine the cooled milk mixture, heavy cream, reserved 1/2 cup peach puree, vanilla extract, and salt. Stir to mix thoroughly.
Chill and Churn: Refrigerate the mixture for at least 2 hours until well chilled. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze Gelato: Transfer the gelato to an airtight container and freeze for at least 2-3 hours until firm.

For a deeper peach flavor, you can roast the peaches before blending. Simply place them in the oven at 350°F (175°C) for 15-20 minutes. This can also be enhanced by adding a splash of peach schnapps to the mixture.
