Paris-Brest
Paris-Brest is a classic French pastry shaped like a ring to honor the Paris-Brest-Paris bicycle race first held in 1910. Choux pastry is piped into a circle, baked until hollow and golden, then filled with a rich praline cream. Plan for about 90 minutes from start to finish, including cooling time.

Ingredients
For the Choux Pastry:
- 1 cup water filtered if possible
- 8 tbsp butter unsalted, cut into pieces
- ½ tsp salt
- 1 cup all-purpose flour sifted
- 4 large eggs at room temperature
For the Praline Cream:
- 1 cup heavy cream chilled
- ¼ cup sugar
- 1 cup praline paste homemade or store-bought
Instructions
For the Choux Pastry:
- Preheat the oven to 375°F (190°C).
- In a medium saucepan over medium heat, combine water, butter, and salt. Bring to a rolling boil.
- Add flour all at once, stirring constantly with a wooden spoon until the dough forms a ball and pulls away from the sides.
- Transfer to a stand mixer. Allow to cool slightly, then beat in eggs one at a time on medium speed until fully incorporated and smooth.
- Fit a piping bag with a large round tip and pipe dough into a circular shape on a baking sheet, about 8 inches in diameter.
- Bake for 30-35 minutes until golden brown. Cool completely on a wire rack.
For the Praline Cream:
- In a stand mixer, whip heavy cream and sugar until soft peaks form.
- Gently fold in the praline paste until smooth and well combined.
For Assembly:
- Cut the pastry ring horizontally into two halves.
- Spread or pipe the praline cream onto the bottom half.
- Place the top half over the cream and dust with powdered sugar before serving.
Notes
- For a more intense praline flavor, try making your own praline paste with toasted hazelnuts and caramel.
- Consider adding a touch of vanilla extract to the cream for additional complexity.
