Stale bread gets a second life in this old-fashioned bread pudding, soaked in a simple vanilla custard and baked until set and golden on top. The result is soft and custardy in the center with slightly crisp edges. It comes together in about an hour and works well with whatever bread you have on hand.
6cupsday-old bread, cubedsuch as French or sourdough
2cupswhole milk
1cupheavy cream
4largeeggsbeaten
1cupgranulated sugar
2teaspoonsvanilla extract
1teaspoonground cinnamon
½teaspoonsalt
½cupraisinsoptional
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set it aside.
In a large mixing bowl, combine the milk, heavy cream, eggs, sugar, vanilla extract, cinnamon, and salt. Whisk until the sugar is dissolved and the mixture is smooth.
Place the cubed bread in the greased baking dish, spreading evenly. Sprinkle the optional raisins over the bread.
Pour the milk mixture over the bread cubes. Press down lightly with a spatula to ensure the bread is fully immersed in the custard.
Cover with aluminum foil and allow the mixture to soak for about 10 minutes to ensure all bread pieces absorb the custard.
Bake in the preheated oven, covered, for 30 minutes. Remove the foil and bake an additional 15 minutes or until the top is golden brown and the custard is set.
A toothpick inserted in the center should come out clean when done.
Allow to cool slightly before serving to let the flavors meld together.
