Monster Cookies pack oats, peanut butter, chocolate chips, and colorful candy-coated chocolates into thick, chewy rounds that skip the flour entirely. They take about 25 minutes from mixing bowl to cooling rack and make a large batch ideal for sharing.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the creamy peanut butter, granulated sugar, brown sugar, and unsalted butter. Use a wooden spoon to mix until the mixture is creamy and smooth.
Add the eggs and vanilla extract to the mixture. Stir until well combined.
Gradually mix in the oats and baking soda, ensuring an even distribution throughout the dough.
Fold in the mini chocolate chips and candy-coated chocolates, stirring just until incorporated.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
