Very ripe bananas are the key to this soft, moist cake — the riper they are, the sweeter and more flavorful the result. A simple cream cheese frosting adds a tangy contrast to the banana and warm spice base. The whole cake takes about 1 hour and 15 minutes to bake and cool.
Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan and line it with parchment paper for easy release.
In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
In another large bowl, cream the butter and sugars together until light and fluffy. This should take about 2-3 minutes.
Add the eggs, one at a time, making sure to beat well after each addition. Incorporate the sour cream and vanilla extract, mixing until smooth.
Fold in the mashed bananas, mixing until just incorporated. Avoid over-mixing to ensure a tender crumb.
Gradually add the dry ingredients to the wet mixture, stirring gently until no streaks of flour remain.
