Mochi ice cream wraps a ball of cold, creamy ice cream in a thin layer of soft, chewy Japanese rice cake dough. The contrast between the stretchy mochi shell and the frozen filling is what makes this treat stand out. The whole batch comes together in about 1 hour, plus freezing time.

Instructions
Using an ice cream scoop, portion the ice cream into 12 balls. Place them on a parchment-lined baking sheet and freeze for at least 30 minutes until firm.
In a microwave-safe bowl, combine the sweet rice flour, water, and sugar. Stir until smooth.
Cover the bowl with plastic wrap, leaving a small gap for ventilation. Microwave on high for 1 minute (900 watts). Stir the mixture and microwave it for an additional minute.
Remove the bowl, stir the dough again, and microwave for a final 30 seconds until the dough turns translucent and sticky.
Dust a clean surface with cornstarch and turn out the mochi dough. Use a rolling pin, also dusted with cornstarch, to roll the dough into a thin layer, about 1/4 inch thick.
Cut out 3-inch circles from the dough using a cutter or lid. Re-roll scraps if necessary.
Remove ice cream balls from the freezer. Quickly wrap each ball with a mochi circle, pinching at the top to seal. Return each wrapped ice cream ball to the freezer immediately to set, seam side down.
