Mississippi Mud Pie is a Southern-style dessert that layers a brownie-like chocolate base with marshmallows, a fudgy topping, and often a crunchy crust. Every version is dense, chocolatey, and meant to be served in generous slices. The whole thing bakes in about 45 minutes and slices best once fully cooled.
Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 1/2 cups of chocolate cookie crumbs with 6 tablespoons of melted unsalted butter. Mix until the crumbs are well-coated and resemble wet sand.
Press the crumb mixture evenly into the bottom and sides of a 9-inch pie pan. Use a flat-bottomed cup to help pack the crumbs firmly. Bake for 10 minutes, then set aside to cool.
Prepare the Filling:
In a saucepan over low heat, combine 1 cup of granulated sugar, 1/3 cup of unsweetened cocoa powder, 1/4 cup of all-purpose flour, and 1/4 teaspoon of salt. Gradually blend in 1/2 cup of melted unsalted butter.
Remove from heat and whisk in 3 large eggs and 1 teaspoon of vanilla extract until smooth. Pour this mixture into the prepared crust.
Bake in the preheated oven for about 25 minutes, or until the filling has set but still jiggles slightly in the center. Allow it to cool completely.
Finish with Topping:
In a clean bowl, whip 1 cup of chilled heavy cream with 2 tablespoons of powdered sugar until soft peaks form. Spread the whipped cream over the cooled pie.
Garnish with 1/2 cup of chocolate shavings for a luxurious finish.
