Mint chocolate chip ice cream is made by steeping fresh or extract-based mint into a cream custard, then churning it with plenty of chocolate chips folded in at the end. The mint flavor is cool and clean without being sharp, and the chips add a firm, chocolatey bite throughout. Active prep takes about 30 minutes, with several hours of freezing needed before serving.
In a medium saucepan, combine 1 cup of whole milk, 3/4 cup of granulated sugar, and 1/4 teaspoon of salt. Cook over medium heat, stirring occasionally, until sugar is dissolved and bubbles form around the edges of the pan. Remove from heat.
Add 1 cup of fresh mint leaves to the milk mixture and let steep for 30 minutes to an hour, allowing the flavors to meld and infuse. Strain mixture through a fine sieve, pressing on the leaves to extract all the flavor.
Stir 2 cups of heavy cream into the mint-infused milk, add 1 teaspoon of pure vanilla extract. Cover and refrigerate until cold, about 4 hours or overnight.
Once chilled, transfer the mixture into an ice cream maker and churn according to the manufacturer’s instructions. About 5 minutes before completing churning, add 1 cup of semi-sweet chocolate chips.
Transfer the churned ice cream into a freezer-safe container and freeze for at least 4 hours, or until firm.

For a natural green color, you can add a few drops of spinach juice to the mixture without affecting the taste.
You can substitute the chocolate chips with chocolate chunks for added texture.
For a dairy-free version, replace the milk and cream with coconut milk.
