Each mini fruit tart starts with a crisp, buttery shortcrust shell filled with vanilla pastry cream and finished with fresh fruit on top. The shells can be baked a day ahead, making assembly quick when you need them. Expect about 1 hour of total prep and baking time for a batch of 12.

Instructions
For the Crust:
In a mixing bowl, combine flour and sugar. Incorporate the cold butter using a pastry cutter or your fingertips until it resembles coarse sand.
Slowly add the ice water, mixing just until the dough holds together without being sticky.
Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat your oven to 350°F (175°C). Roll out the dough to about 1/8-inch thickness and cut into rounds to fit your tart pans.
Press the dough neatly into tart pans or muffin tins and prick the bottoms with a fork. Bake for 15-20 minutes or until the edges are lightly golden. Let cool completely.
For the Filling:
In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Transfer the mixture to a piping bag and fill the cooled tart shells.
For the Topping:
Arrange fresh fruit on top of each tart. Serve immediately or refrigerate until ready to serve.
