Instructions
Prepare the Tart Shell: In a mixing bowl, combine flour and sugar. Add cubed butter and rub with fingertips until the mixture resembles coarse crumbs. Add the beaten egg and mix until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
Preheat and Roll Out: Preheat the oven to 350°F (175°C). Roll out dough on a lightly floured surface to 1/8 inch thickness. Cut out circles and line the tart molds. Prick the base with a fork.
Bake the Shells: Place the tart shells on a baking sheet and bake for 15 minutes or until golden brown. Let them cool.
Make the Pastry Cream: Heat milk in a saucepan until just boiling. In a separate bowl, whisk together sugar, cornstarch, and egg yolks until smooth. Gradually pour hot milk into the egg mixture while whisking continuously. Return mixture to the saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat, then add vanilla and almond extracts. Cool completely.
Assemble the Tarts: Fill each tart shell with cooled pastry cream using a piping bag or spoon. Top with an assortment of fresh berries.
