Medjool dates are pressed into a buttery tart shell alongside a ground almond filling, letting the dates' natural caramel-like sweetness do most of the work. The almond layer bakes to a firm, nutty crumb that holds the dates in place. The tart takes about an hour to prepare and bake, and slices cleanly once cooled.
Tart Shell: In a mixing bowl, combine all-purpose flour, almond flour, sugar, and salt. Add cold, cubed butter. Using a food processor, pulse until the mixture resembles coarse crumbs. Add ice-cold water and mix until the dough begins to form. Wrap in plastic wrap and refrigerate for 30 minutes. Roll out the dough and line a tart pan, trimming the edges for a clean finish.
Filling: Preheat the oven to 350°F (175°C). In a food processor, blend chopped dates, blanched almonds, heavy cream, honey, and vanilla extract until smooth. Spread the filling evenly over the tart crust.
Bake: Place the tart in the oven and bake for 30 minutes until the filling is set and the crust is golden brown. Cool tart completely before slicing to serve.
