Matcha cheesecake uses a standard baked cheesecake base with matcha green tea powder blended into the cream cheese filling, giving it an earthy, slightly bitter flavor that balances the sweetness well. Plan for about 90 minutes of active prep and baking, plus several hours of chilling before serving.
Preheat your oven to 175°C (347°F). In a medium-sized bowl, combine the finely crushed graham crackers with melted butter. Mix until crumbs are evenly coated.
Press the mixture firmly into the bottom of a springform pan to form an even crust. Bake for 10 minutes. Set aside to cool.
Prepare the Filling
In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the matcha powder and blend until fully incorporated and the color is uniform.
Add eggs, one at a time, mixing thoroughly after each addition. Pour in the heavy cream and vanilla extract, and mix until smooth.
Baking
Pour the matcha-infused filling over the pre-baked crust. Smooth the top with a spatula.
Bake the cheesecake in a water bath for 50 minutes to 1 hour, or until the center is set but still jiggles slightly when shaken.
Turn off the oven and leave the cheesecake inside with the door slightly open for an additional hour to cool gradually.
Chill
Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to fully set and develop its flavors.

Notes
For a deeper matcha flavor, consider sieving an additional tablespoon of matcha powder over the cheesecake before serving. Garnish with fresh berries or a dollop of whipped cream to complement the earthy flavors.
