Instructions
Preheat the oven to 350°F (175°C). Lightly grease a 9-inch round cake pan and line it with parchment paper for easy removal.
In a mixing bowl, sift together the flour, baking powder, and salt. Set aside.
In another bowl, combine the sugar and lemon zest. Rub the zest into the sugar with your fingertips until the sugar is fragrant and moist.
Whisk in the olive oil until fully combined, then add the eggs, one at a time, whisking well after each addition.
Stir in the lemon juice and half of the flour mixture, followed by the milk. Once combined, add the remaining flour mixture and stir until smooth.
Pour the batter into the prepared cake pan. Smooth the top with a rubber spatula.
