Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan and line the bottom with parchment paper, allowing the edges to overhang for easy removal.
In a mixing bowl, combine 1 cup of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt. Add chilled cubed butter. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
Press two-thirds of the crumb mixture firmly into the bottom of the prepared pan to form a crust. Reserve the remaining third for the crumble topping. Bake the crust for about 10 minutes until lightly golden.
Meanwhile, in another bowl, whisk together lemon juice, 1 cup of sugar, lemon zest, and eggs until well combined. Slowly whisk in melted butter until the mixture is smooth and well incorporated.
Pour the lemon curd mixture over the baked crust. Sprinkle the remaining crumb mixture evenly over the top.
Bake for 25 minutes or until the top is golden and the lemon curd is set. Let the bars cool completely in the pan on a wire rack before slicing.
