Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
For the Crumble Topping:
In a bowl, combine 1/2 cup flour and 1/2 cup granulated sugar. Add the cold, cubed butter and mix with your fingertips until the mixture resembles coarse crumbs. Set aside.
For the Cake:
In another bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, and salt. In a separate large mixing bowl, beat the softened butter and 2/3 cup granulated sugar until light and fluffy, about 3 minutes.
