Lavender Honey Gelato blends dried culinary lavender with warm honey into a rich, slow-churned frozen base. Plan on about 30 minutes of active prep plus several hours of chilling and freezing time.
In a medium saucepan, combine the whole milk, heavy cream, honey, and dried culinary lavender.
Heat the mixture over medium heat until it just begins to simmer.
Remove from heat and let steep for 20 minutes to infuse the flavors.
Using a fine mesh strainer, strain the milk mixture into a bowl to remove the lavender flowers. Return the milk to the saucepan and gently rewarm.
In a mixing bowl, whisk the egg yolks until they are pale and slightly thickened. Slowly pour the warm milk mixture into the yolks, whisking constantly to prevent curdling.
Return the yolk mixture to the saucepan and cook over low heat, stirring constantly with a whisk until the mixture thickens slightly. It should coat the back of a spoon.
Remove from heat and let cool to room temperature. Transfer the mixture to an ice cream maker and churn according to manufacturer’s instructions.

Lori’s Tips
If lavender is too strong a flavor for your taste, reduce the amount to 1 tablespoon.
For a different flavor profile, try adding a teaspoon of vanilla extract to the mixture before cooling.
If you are without an ice cream maker, freeze the mixture in a shallow dish and stir every 30 minutes until firm.
