Laura Bush's Cowboy Cookies became nationally known during the 2000 presidential campaign and have been a crowd favorite ever since. Packed with rolled oats, pecans, coconut, and chocolate chips, they bake up thick and hearty with plenty of chew. A single batch makes around 5 dozen cookies in just under an hour.
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large mixing bowl, using an electric mixer, cream the softened butter, granulated sugar, and brown sugar together until the mixture is light and fluffy, around 3-4 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, combining just until mixed.
Fold in the chocolate chips, oats, and pecans with a spatula until evenly distributed.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the tray for 5 minutes before transferring to a wire cooling rack to cool completely.

Lori’s Tips
For a chewier cookie, reduce the baking time slightly and let the cookies finish setting on the tray.
Experiment with different nuts or add a touch of shredded coconut for a variation.
If you prefer a less sweet version, balance the sugar by cutting 1/2 cup each of the granulated and brown sugar.
