Jello Poke Cake is made by poking holes in a baked white or yellow cake and pouring liquid Jello over the top so it soaks down into the layers. The result is a colorful, moist cake that has been a popular American party dessert since the 1970s. Total time runs about 45 minutes plus setting time in the refrigerator.
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan to prepare for baking.
In a large mixing bowl, combine the white cake mix, water, vegetable oil, and eggs. Whisk thoroughly until the batter is smooth and free of lumps.
Pour the prepared batter into the greased baking pan, spreading it evenly. Bake in the preheated oven for approximately 30-35 minutes or until a toothpick inserted into the center comes out clean.
Once baked, remove the cake from the oven and allow it to cool for 15 minutes. Using a wooden skewer or fork, poke holes all over the surface of the warm cake, making sure not to go all the way through to the bottom.
In a medium bowl, dissolve the jello gelatin in 1 cup of boiling water, stirring until completely dissolved. Add the cold water and stir to combine.
Pour the jello mixture evenly over the poked cake, allowing the liquid to seep into the holes. Refrigerate for at least 3 hours, or until completely cooled and set.
For the topping, prepare the instant pudding mix according to package directions using the cold milk. Fold in the whipped topping until well combined.
Spread the pudding and whipped topping mixture evenly over the chilled cake. Refrigerate for another hour before serving.
