Instructions
In a mixing bowl, beat egg whites with the cream of tartar until they form soft peaks. Gradually add the granulated sugar and continue whipping until stiff, glossy peaks form. Set aside.
In another bowl, whisk together the egg yolks, milk, and vanilla extract until well combined.
Gently fold the flour and baking powder into the yolk mixture, then carefully fold in the egg white mixture using a spatula. Avoid deflating the batter to maintain its fluffy texture.
Preheat a non-stick skillet over low heat. Grease it lightly with butter.
Spoon the batter onto the skillet, creating thick mounds. Cover the skillet with a lid and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
Transfer the cooked pancakes onto a serving plate, dust with powdered sugar, and garnish with maple syrup and fresh berries if desired.
