Cloud Bread Dessert is a low-carb, egg-based bake that turns out soft, pillowy rounds with a lightly sweet flavor. The key technique is whipping egg whites to stiff peaks before folding in the remaining ingredients, which gives the bread its airy structure. The whole recipe takes around 30 minutes including baking.
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper for easy cleanup.
Separate the egg whites and yolks. In a large mixing bowl, beat the egg whites until foamy using an electric hand mixer. Gradually add 2 tablespoons of sugar and cream of tartar, then beat until stiff peaks form. You will know they are ready when you see glossy peaks that hold their shape.
In a separate bowl, whisk the egg yolks with 1 tablespoon of sugar, cornstarch, and vanilla extract until smooth and creamy.
Gently fold the yolk mixture into the egg whites with a spatula. Do this carefully to maintain the volume and airiness.
Spoon the batter onto the prepared baking sheet, forming 4 equal-sized mounds. Bake for 30 minutes until the tops are lightly golden and the centers set.
Once cooled, top with freshly whipped heavy cream and any seasonal fruits for garnish, such as berries or slices of tropical fruits.
