Soft, pillowy cinnamon rolls filled with a generous layer of cinnamon sugar and finished with a sweet glaze are a satisfying weekend baking project. The enriched dough needs two rises, so plan for around 3 hours total before they come out of the oven. They are best served warm, straight from the pan.
2 ¼teaspoonsactive dry yeastfreshly bought for best results

Glaze
1cuppowdered sugarsifted
2tablespoonswhole milk
½teaspoonvanilla extract
Instructions
In a large mixing bowl, combine the warm milk, yeast, and sugar. Let the mixture sit for about 5 minutes until it becomes frothy.
Using a stand mixer fitted with a dough hook, add the flour, salt, eggs, and softened butter to the yeast mixture. Knead on medium speed for about 7-10 minutes until the dough is smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour, or until it has doubled in size.
Once the dough has risen, punch it down and roll it out on a floured surface into a 16x12 inch rectangle.
For the filling, spread the softened butter over the surface of the dough. Mix the brown sugar and cinnamon and sprinkle them evenly over the buttered dough.
Tightly roll up the dough starting from one of the long edges, and then cut it into 12 even pieces.
Place the rolls in a greased 9x13 inch baking dish. Cover and allow them to rise for another 30-45 minutes, or until doubled.
Preheat the oven to 350°F (175°C) and bake the rolls for 20-25 minutes until they are golden brown.
While the rolls are baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
Once baked, let the rolls cool slightly before drizzling the glaze over them.
