Instructions
In a small saucepan over low heat, whisk together the coconut milk and matcha powder. Heat gently until the matcha is fully dissolved, giving off a bright green aroma, about 2-3 minutes. Remove from heat and let it cool slightly.
Stir in the honey (or maple syrup) and vanilla extract into the warm matcha mixture until well combined, allowing the flavors to meld.
In a mixing bowl, whisk the Greek yogurt until smooth. Fold in the matcha mixture gently, ensuring a smooth, consistent texture.
In a separate bowl, whip the aquafaba using a whisk until soft peaks form. This should take about 5-7 minutes of vigorous whisking. Alternatively, use a stand mixer to expedite the process.
Gently fold the whipped aquafaba into the matcha-yogurt mixture using a spatula. Aim for a light, airy consistency, maintaining the mousse's fluffiness.
Divide the mousse among serving glasses and refrigerate for at least 1 hour before serving, allowing the flavors to develop and the mousse to set.
