These homemade pop-tarts are built on a buttery, flaky shortcrust pastry filled with fruit jam and finished with a simple icing on top. Making them from scratch takes about 90 minutes and produces a much more substantial, less sweet result than the packaged kind. They work equally well for breakfast or as an afternoon treat.
1cupfruit preservessuch as strawberry or raspberry
1tablespooncornstarchmixed with 1 tbsp water

1cuppowdered sugar
2tablespoonsmilk
½teaspoonvanilla extract
Instructions
To prepare the pastry dough, combine the flour, sugar, and salt in a large mixing bowl. Add in the cold butter cubes and work them into the flour using a pastry cutter until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, blending until the dough starts to come together. Form into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness. Cut out rectangles (about 3x4 inches) for the pop-tarts.
In a small bowl, mix the fruit preserves with the cornstarch-water mixture. Spoon about 1 tablespoon of filling onto half of the rectangles, keeping clear of the edges.
Place another rectangle of dough over each filled piece. Use the tines of a fork to seal the perimeter, and then poke the tops with a fork to allow steam to escape.
Transfer the pop-tarts to the prepared baking sheet and bake for 20 minutes, or until they are golden brown.
For the glaze, mix the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle over the warm pop-tarts and let them cool on a wire rack.
