These homemade Jammie Dodgers are buttery shortbread rounds sandwiched together with tangy raspberry jam and cut with a small window on top to show the filling. The dough is straightforward to make and roll out, and the whole batch is ready in under an hour. They work well for afternoon tea or as a gift packed into a tin.
In a medium mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
Add vanilla extract to the creamed mixture and mix until well incorporated.
Gradually add the sifted all-purpose flour, mixing gently until a dough forms. Be careful not to overwork the dough.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes, allowing it to firm up.
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Roll out the chilled dough to about 1/4 inch thickness on a lightly floured surface.
Using a round biscuit cutter, cut out dough circles and place half of them on the prepared baking sheet.
Use a smaller cutter to cut out shapes from the centers of the remaining circles to create the top biscuit layer.
Bake the biscuits in the preheated oven for 10-12 minutes until they are just starting to turn golden.
Transfer the biscuits to a cooling rack and allow them to cool completely.
