Store-bought or homemade puff pastry forms the base of this recipe, layered with an almond cream filling and a light touch of citrus zest before baking. The pastry bakes up flaky and golden while the almond filling sets into a soft, nutty layer underneath. Total time is around 45 minutes, making it manageable for a weeknight dessert.
Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
On a lightly floured surface, unfold puff pastry sheets and gently roll them out to smooth any creases.
In a mixing bowl, combine the almond paste, granulated sugar, vanilla extract, and orange zest. Mix until smooth.
Spread the almond mixture evenly over one pastry sheet, leaving a 1/2 inch border. Brush the edges with egg wash.
Top with the second pastry sheet and press the edges to seal. Score the top in a decorative pattern and brush with more egg wash. Sprinkle sliced almonds over the top.
Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed. Allow to cool slightly.
Dust with powdered sugar before serving. Perfect with freshly brewed espresso or a light dessert wine.

Notes
For a twist, consider adding a layer of fruit preserves or chocolate beneath the almond paste.
Make sure to work with cold puff pastry to prevent sticking.
