Glazed doughnuts are soft, yeasted rings fried until golden and dipped in a simple powdered-sugar glaze that sets to a thin, shiny coat. The dough requires two rises, so plan for about two hours from start to finish before frying.
In a mixing bowl, combine the warm milk, yeast, and sugar. Let it sit for about 5-10 minutes, or until the mixture becomes foamy.
Add 2 1/2 cups of the flour, salt, softened butter, and the egg to the yeast mixture. Stir until a dough begins to form.
Transfer the dough onto a floured surface. Knead it by hand, gradually adding the remaining 1/2 cup of flour, until the dough is smooth and elastic. This should take about 8-10 minutes.
Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Roll out the dough on a floured surface to about 1/2-inch thickness. Using a doughnut cutter, cut out doughnuts and place them onto a parchment-lined baking sheet. Cover and let them rise again for 30 minutes.
Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully fry the doughnuts, a few at a time, until golden brown on each side, about 1-2 minutes per side. Use a slotted spoon to transfer them to a wire rack.
For the glaze, whisk together powdered sugar, milk, and vanilla extract in a bowl until smooth.
Once the doughnuts have cooled slightly, dip them into the glaze, allowing the excess to drip back into the bowl. Return to the wire rack to set.
