A Gingerbread Spiced Yule Log combines a moist, spiced sponge — built with molasses, ginger, and warm holiday spices — with a rich chocolate and cream filling, then rolled and decorated to look like a log. It takes about 90 minutes from start to finish and makes a striking centerpiece for a Christmas dessert table.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, sift together the flour, ground ginger, cinnamon, and nutmeg. Set aside.
Whisk the egg yolks with half of the sugar until pale and thick. Mix in the molasses.
In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar, continuing to beat until stiff peaks form.
Gently fold the dry ingredients into the yolk mixture. Then, fold in the egg whites until the batter is smooth. Spread evenly on the prepared baking sheet.
Bake for 10-15 minutes, or until the cake is springy to the touch. Allow to cool slightly, then roll the sponge with the parchment paper from the short end and let it cool completely.
For the Cream Filling:
Whip the cream, powdered sugar, and vanilla extract until stiff peaks form.
Unroll the cooled sponge and spread the cream evenly over it. Re-roll the sponge without the parchment, then refrigerate for at least 30 minutes before serving.
