Make the Crust: Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture is thick and sandy. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
Prepare the Filling: In a large bowl, use an electric mixer to beat the cream cheese until smooth and creamy. Add the sugar and continue to beat until fully combined. Add the eggs one at a time, mixing briefly after each. Stir in sour cream, vanilla extract, and rainbow jimmies until just combined.
Bake the Cheesecake: Pour the filling over the cooled crust. Wrap the bottom of the springform pan with foil and place it in a large roasting pan. Pour hot water into the roasting pan until it reaches halfway up the side of the springform pan, creating a water bath.
