Fruity Jello Cake layers bright, colorful gelatin into a soft cake base for a dessert that's as eye-catching as it is easy to make. The gelatin is poured over a baked cake and left to set, creating distinct pockets of fruit flavor throughout. Plan for a couple of hours of chilling time before serving.
Preheat the oven to 350°F (175°C), and prepare the vanilla cake mix as per the package instructions. Pour the batter into a lightly greased 9x13 inch baking pan.
Bake the cake for 25-30 minutes until a toothpick inserted in the center comes out clean. Allow it to cool completely in the pan.
Meanwhile, dissolve the strawberry gelatin in 1/2 cup boiling water, then add 1/2 cup cold water. Do the same for the lime gelatin in separate bowls.
Once the cake is cool, use a fork to gently poke holes across the surface. Carefully pour the strawberry gelatin over one half and the lime gelatin over the other. Refrigerate for at least 3 hours until the gelatin sets.
When the cake is set, spread the thawed whipped topping evenly over the gelatinated cake using an offset spatula. Decorate with strawberry slices and kiwi pieces, evenly distributing the vibrant fruits over the surface.

Notes
For an extra fruity punch, consider adding other seasonal fruit slices like mango or blueberries.
For a textured contrast, sprinkle a bit of crushed graham crackers just before serving.
