Without any flour, this chocolate cake relies entirely on eggs, butter, and good-quality dark chocolate for its structure, producing a dense, fudgy result that happens to be gluten-free. It bakes in about 25 minutes and needs a full hour to cool before slicing cleanly.

Instructions
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
Melt the dark chocolate and butter together using a double boiler or a heatproof bowl set over barely simmering water. Stir until smooth and creamy, then set aside to cool slightly.
In a mixing bowl, whisk the eggs and sugar together until thick and pale, about 5 minutes. Ideally, you should achieve a ribbon-like consistency.
Gently fold the melted chocolate mixture into the egg mixture followed by vanilla extract and salt, ensuring a smooth batter. Be careful not to overmix.
Pour the batter into the prepared springform pan. Smooth the top with a spatula, then bake in the preheated oven for 40-45 minutes or until the cake has set and the top is slightly cracked.
Allow the cake to cool in the pan for ten minutes before transferring it to a cooling rack to cool completely.

Tammy’s Tips:
Enhance the chocolate flavor by adding a pinch of espresso powder to the batter. For a lighter alternative, substitute half of the chocolate with semi-sweet or milk chocolate. For a nutty twist, garnish with toasted almond flakes before serving.
