Flourless chocolate cake is made with just eggs, butter, sugar, and good-quality dark chocolate, producing a dense, fudgy texture that is naturally gluten-free. The batter takes only minutes to mix, and the cake bakes in about 25 minutes — though it firms up considerably as it cools, so resting time matters.
½cupunsalted buttercubed, plus extra for greasing the pan
¾cupsugar
4largeeggsat room temperature
¼cupunsweetened cocoa powdersifted
1teaspoonvanilla extract
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a springform pan with butter and line the bottom with parchment paper.
In a double boiler, melt the chopped dark chocolate and cubed butter together over simmering water. Stir occasionally until smooth and silky. Remove from heat and let cool slightly.
In a large mixing bowl, whisk together the sugar and eggs until light and frothy. This should take about 5 minutes.
Slowly fold the melted chocolate mixture into the egg mixture, using a spatula. Then, gently incorporate the sifted cocoa powder and vanilla extract, ensuring no lumps remain.
Pour the batter into the prepared springform pan and smooth out the top with a spatula. Tap the pan gently on the counter to remove any air bubbles.
Bake for 25 to 30 minutes, until the cake has set but still moist in the center. A toothpick inserted into the center should come out with a few moist crumbs attached.
Let the cake cool in the pan on a wire rack for 10 minutes before removing the sides of the springform pan. Serve warm or at room temperature.

Notes
For an extra layer of flavor, add a pinch of sea salt to the melted chocolate mixture.
If you prefer a less sweet option, reduce the sugar to 1/2 cup.
Consider using a high-quality vanilla extract for the best results.
