Fiadone is a Corsican baked cheesecake made with fresh ricotta-style cheese and plenty of lemon zest, giving it a light, bright flavor that sets it apart from denser cheesecakes. It bakes in about 40 minutes and relies on just a handful of simple ingredients, with no crust required.

Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan thoroughly.
In a large mixing bowl, combine the Brocciu cheese, granulated sugar, and vanilla extract. Beat with an electric mixer until the mixture is smooth and creamy.
Add the eggs one at a time, beating well after each addition to incorporate fully.
Gently fold in the lemon zest and juice until just combined. Pour the mixture into the prepared springform pan and smooth the top with a spatula.
Bake in the preheated oven for 30 minutes or until the top is golden and the center is set but slightly wobbly.
Allow the cheesecake to cool in the pan on a wire rack before removing the springform outer ring. Serve chilled or at room temperature.
