In a blender, combine the mango chunks and lime juice. Blend until smooth and no chunks remain. You should have a puree.
In a mixing bowl, whisk together the mango puree and granulated sugar until the sugar is dissolved and the mixture is smooth.
Slowly add in the whole milk and heavy cream, and continue whisking gently to combine. Ensure the mixture is homogeneous but do not whisk too aggressively to avoid excess air.
Chill this mixture in the refrigerator for at least 20 minutes to enhance the flavors and improve the texture.
Pour the chilled mixture into an ice cream maker and process according to the manufacturer's instructions until it reaches a creamy, gelato-like consistency, typically about 20 minutes.
Transfer the gelato into a freezer-safe container, and freeze for an additional hour to firm up before serving.

Tammy’s Tips:
Enhance the tropical flavor by adding a touch of coconut cream as a part of the milk mixture.
If you don't have ripe mangos, canned mango puree can be used as a substitute, though it may slightly alter the flavor.
For a more textured gelato, fold in small mango chunks after blending.
