Eton Mess is a quick, no-bake British dessert made from crushed meringue, whipped cream, and fresh strawberries folded loosely together. It comes together in about 15 minutes and is best served immediately, when the meringue still has some crunch against the soft cream and fruit.
Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper.
In a large mixing bowl, use an electric mixer to beat the egg whites until stiff peaks form. Gradually add the granulated sugar, one spoonful at a time, beating until the mixture is glossy and the sugar has fully dissolved.
Using a spatula, gently spread the meringue onto the prepared baking sheet in small rounds or as a single large layer. Bake for 1 hour, then turn off the oven and leave the meringue inside to cool completely.
Once cooled, break the meringue into bite-sized pieces.
In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form.
In a large serving bowl or individual glasses, layer the broken meringue, whipped cream, and mixed berries. Aim for a pleasing and somewhat random distribution.

Notes
For a twist, substitute some of the strawberries for blueberries or blackberries.
Vegan adaptations can be made by using whipped coconut cream and aquafaba-based meringues.
This can be prepared partially in advance: bake and store the meringues in an airtight container until ready to assemble.
