Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
In a large bowl, combine the granulated sugar, brown sugar, and softened butter. Using an electric mixer, cream until light and fluffy.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and espresso powder until well incorporated.
Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.
Roll the dough into 1-inch balls. Coat each ball thoroughly in confectioners' sugar and place onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes. The cookies should have a cracked, crinkled appearance but remain soft to the touch.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
