Strawberry shortcake layers sweetened fresh strawberries and whipped cream between split buttery biscuits for a classic warm-weather dessert. The biscuits bake in about 15 minutes, and the whole thing can be assembled and on the table in under an hour.
Preheat your oven to 425°F (220°C). Prepare a baking tray with parchment paper.
In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
Add the butter into the flour mixture and use a pastry cutter or your fingers to blend until it resembles coarse crumbs.
Mix in the cream and vanilla until a soft dough forms. Turn out onto a floured surface and knead briefly until smooth.
Roll the dough to about 3/4-inch thickness and use a round cutter to cut biscuits. Arrange on the prepared tray.
Brush the tops with additional cream and bake for about 15-20 minutes, or until golden brown.
For the Strawberry Filling:
In a medium bowl, combine strawberries with sugar and lemon juice. Let it sit for at least 30 minutes to macerate and become syrupy.
For the Whipped Cream:
Chill a mixing bowl and whisk. Whip the cream, sugar, and vanilla to soft peaks.
Assembly:
Split the biscuits and layer with strawberry filling and whipped cream. Top with the other half of the biscuit, more strawberries and a generous dollop of cream.
