The Dream Cake is a modern twist on the classical Danish dream cake, known for its heavenly coconut topping and light, moist sponge. This delightful dessert carries the tradition of Danish baking with a tender cake base topped with caramelized coconut, making it a memorable indulgence that’s perfect for any celebratory event.
Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well to aerate the dry ingredients.
In a separate bowl, whisk the eggs until frothy, then add the warm milk and melted butter. Mix until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring with a spatula until no lumps remain. Pour the smooth batter into the prepared cake pan.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Meanwhile, prepare the topping.
For the topping, combine the softened butter, brown sugar, milk, and coconut in a saucepan over medium heat. Stir until the mixture is smooth and slightly bubbling.
Once the cake is done, remove it from the oven and increase the temperature to 400°F (200°C). Spread the hot coconut mixture evenly over the top of the cake.
Return the cake to the oven and bake for an additional 5-10 minutes or until the topping is golden brown and bubbling. Let cool before serving.
