Diplomat pudding is a chilled, set dessert built from layers of sponge cake or ladyfingers, stewed fruit, and a cream mixture made by folding whipped cream into custard. It is typically prepared in a mold and turned out before serving, making it a good make-ahead option for gatherings. Chilling time is at least 4 hours once assembled.
Preheat your oven to 350°F (175°C).In a saucepan, warm the milk over medium heat until small bubbles form around the edge. Do not let it boil.
In a mixing bowl, whisk the egg yolks and sugar until pale and thick.
Temper the yolk mixture by slowly adding the warm milk, whisking continuously.
Transfer the mixture back to the saucepan and cook on low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat and stir in vanilla extract. Allow to cool slightly.
In a 9-inch baking dish, layer half of the sponge cake cubes, followed by a layer of custard, then stewed fruit. Repeat the layers, finishing with the remaining custard.
Bake in the oven for 45 minutes until set and slightly golden on top.
Let the pudding cool, then top with whipped cream before serving.

For a richer flavor, substitute half of the milk with heavy cream in the custard base.
For an alcoholic twist, drizzle a tablespoon of Grand Marnier over each layer of sponge cake.
