A smash cake is a small, single-serving cake sized for a baby's first birthday, meant to be grabbed and explored rather than neatly sliced. This version has a tender, lightly sweet crumb and a simple frosting that holds up well to little hands. It bakes in about 25 minutes and can be decorated to match any party theme.
1 ½cupsall-purpose floursifted for a lighter texture
1tspbaking powder
½tspbaking soda
¼tspsalt
½cupunsalted buttersoftened
¾cupgranulated sugar
1tspvanilla extract
2largeeggsroom temperature
½cupbuttermilkroom temperature
Instructions
Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the softened butter and sugar using an electric mixer until light and fluffy, about 3 minutes. Look for a pale color and creamy texture as a cue.
Mix in the vanilla extract followed by the eggs, adding them one at a time, and beat until well combined.
Alternate adding the flour mixture and the buttermilk into the butter mixture, beginning and ending with the flour. Mix gently until just combined to avoid overmixing.
Pour the batter into the prepared cake pan, smoothing the top with a rubber spatula.
Bake for 25 minutes, or until a toothpick inserted in the center comes out clean. The cake should be a light golden color.
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
For a delightful twist, consider adding a hint of zest from an organic lemon or orange to the batter.
If you wish to make this cake dairy-free, substitute the buttermilk with a plant-based milk (such as almond or soy milk) mixed with 1 tablespoon of vinegar.
