Toblerone Mousse is a light, airy chocolate dessert built around the honey-almond flavor of Toblerone bars. Melted chocolate is folded into whipped cream to create a mousse that sets in the refrigerator in about 2 hours. It serves well in individual glasses and requires no baking.

Instructions
Melt the Toblerone chocolate using a double boiler, ensuring the bowl doesn't touch the simmering water beneath. Stir occasionally until smooth, then set aside to cool slightly without hardening.
In a mixing bowl, whisk the egg yolks with granulated sugar until thick and pale. Gently fold the slightly cooled chocolate into this mixture.
In a separate bowl, beat the egg whites until they form soft peaks. Gently fold these into the chocolate mixture.
Whisk the cold heavy cream until it holds stiff peaks. Carefully fold this into the chocolate mixture until fully incorporated.
Spoon the mousse into serving bowls or glasses. Refrigerate for at least 2 hours to set.

For an added nutty crunch, consider folding in chopped roasted almonds.
For a lighter version, use Greek yogurt instead of some heavy cream.
