This Oreo Layer Cake stacks moist chocolate cake layers with a cookies-and-cream cream cheese frosting and plenty of crushed Oreos throughout. The whole cake is finished with a chocolate ganache drip and more cookies on top. Plan for about 2 hours from start to finish, including cooling time.

1 and ½cupsheavy creamchilled
¼cuppowdered sugar
10Oreo cookiescrushed
Instructions
Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed until well blended.
Stir in boiling water until evenly mixed. The batter will be thin; this is normal.
Divide batter evenly between the prepared cake pans.
Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
Cool the cakes in their pans for 10 minutes, then remove to a cooling rack to cool completely.
For the filling, whip heavy cream and powdered sugar in a bowl using an electric mixer until stiff peaks form.
Fold the crushed Oreo cookies into the whipped cream.
Layer the cakes, spreading a generous amount of cookies-and-cream filling between each layer and on top.

Tammy’s Tips
For an even richer chocolate flavor, consider adding a tablespoon of espresso powder to the batter. It enhances the chocolate without adding a coffee taste. If you prefer your desserts less sweet, reduce the sugar in the cake layers by 1/4 cup.
