Homemade ice cream sandwiches use two soft or crispy cookies with a thick layer of ice cream pressed between them. You can mix and match cookie flavors and ice cream varieties to suit your taste. Allow about 30 minutes of active prep time, plus freezing time to firm them up before serving.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixer, cream together the butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3 minutes.
Add the eggs, one at a time, beating well after each addition.
Gradually mix in the sifted flour, baking soda, and salt until fully combined. Stir in the chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are golden brown. Let the cookies cool on a cooling rack.
Once cooled, scoop about half a cup of ice cream onto the flat side of one cookie. Top with another cookie, pressing gently to form a sandwich. Smooth the edges with a spatula if needed.
Wrap each ice cream sandwich in plastic wrap and freeze for at least 2 hours before serving.
