Instructions
Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.
In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until fully combined.
In another bowl, using an electric mixer, cream together the softened butter and sugar on medium speed until light and fluffy, about 3 minutes.
Add the vanilla extract and egg to the creamed mixture, then beat until well incorporated.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.
Using a cookie scoop, drop 2-tablespoon-sized mounds of dough onto the prepared baking sheets, leaving ample space for spreading.
Bake for 8-10 minutes or until the tops spring back when lightly touched. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
To make the filling, beat together the marshmallow creme, softened butter, powdered sugar, and vanilla extract in a medium bowl until smooth and fluffy, about 2 minutes.
Match cookies of similar size and spread or pipe a heaping tablespoon of filling onto the flat side of one cookie, topping with another cookie to form a sandwich. Repeat with remaining cookies.
